WHAT IS MISO?

At the heart of Tsubi Soup is miso - a traditional Japanese ingredient made by master crafters in Kyoto, Japan for six generations.
We use only the highest grade Non-GMO soybeans blended with Koji (Aspergillus oryzae), a natural catalyst for the magical fermentation process that transforms soybean paste into the delicious and nutritious miso paste we use in our soups.
Our three plant-based blends are carefully crafted to complement the unique toppings in each flavor, ensuring a delicious and satisfying soup every time. During the fermentation process, probiotics and enzymes naturally occur, aiding in long-term digestive health and balance of good bacteria in your gut. Miso is also rich in natural vitamins B's, K's, and E's, as well as minerals, making it a nutritious choice for any meal.
To ensure the best possible taste and quality, our miso is left to mature for 3 to 12 months in a cool environment, allowing the flavors to develop and intensify. And with its delightful taste and numerous health benefits, it's no wonder they say, MI-SO Happy!
BUT ISN'T MISO SOUP PLANT-BASED?

This is a common misconception. Miso soup is not plant-based or vegan due to the traditional use of dashi, a stock made from fish and seafood. Dashi is a crucial component in the making of miso soup, ramen, udon broths and soba. However, at Tsubi Soup, we have crafted a plant-based broth that simmers wild seaweed and shiitake mushrooms to create a deep, hearty umami flavor, without the use of fish or seafood. This ensures that no animals are harmed in the making of our soup.

We understand that many people are concerned about their sodium intake and we want to assure you that Tsubi Soup is a great choice for those looking for a lower sodium option miso soup. While miso does require salt to begin the fermentation process, our soups contain an average of only 440 milligrams of sodium per serving, which is less than half of what you would find in many other instant soups. We have carefully selected the best ingredients, without overloading them with salt, to bring you a delicious and satisfying flavor that comes naturally from our miso and vegetables.
